甘油是无色味甜澄明黏稠液体。无臭。有暖甜味，能从空气中吸收潮气，也能吸收硫化氢、氰化氢和二氧化硫。对石蕊呈中性。甘油是甘油三酯分子的骨架成分。当人体摄入食用脂肪时，其中的甘油三酯经过体内代谢分解，形成甘油并储存在脂肪细胞中。因此，甘油三酯代谢的终产物便是甘油和脂肪酸。

甘油在食品工业中用作甜味剂、烟草剂的吸湿剂和溶剂。
