精氨酸是维持婴幼儿生长发育必不可少的氨基酸。它是鸟氨酸循环的中间代谢物，能促使氨转变成为尿素，从而降低血氨含量。它也是精子蛋白的主要成分，有促进精子生成，提供精子运动能量的作用。此外，静注精氨酸，能刺激垂体释放生长激素，可用于垂体功能试验。精氨酸可用作营养增补剂；与糖进行加热反应（氨基-羰基反应）可获得特殊的香味物质。GB 2760-2001规定为允许使用的食品用香料。氨基酸输液及综合氨基酸制剂的重要成分。

Principle:
                            (microbial glutamate dehydrogenase)
(1) 2-Oxoglutarate + NADPH + NH4+ → L-glutamic acid + NADP+ + 
H2O
                     (urease)
(2) Urea + H2O → 2 NH3 + CO2

(arginase)
(3) L-Arginine + H2O → urea + ornithine
